This chocolate bar recipe combines ruby with dried raspberry pieces. The great thing about ruby is that it opens up to a wide variety of new, exciting ingredients. Its fruity taste and fresh sour notes work very well with acid fruits and berries.

Ingredients	Preparation
52g dried raspberries pieces	Place into mould.
1043g Callebaut - Finest Belgian Ruby Chocolate - Couvertures - RB1 - callets - 2.5kg bag	Temper and add. Leave to crystallise.
