Pastry chefs at moccacafé and couple - Tábor, Czech republicEva Krejsová and Jiří Hochman
“It’s funny... I was never destined to become a pastry chef like my mom… Every day, she sold her bakes and delights on local markets. It really didn’t mean that much to me… Until I met Jiří. Not only did I fall in love with him, I also joined him in his pastry passion. That’s how we started our 2 little shops in the heart of Tábor. Today, these shops are our life.
"We never dreamed about becoming the best pastry chefs in the world. Instead, we dreamed of doing things right."
Sure, we have our ideals, but they were never infused with becoming the best pastry chefs in the world. Instead, we dreamed of doing things right. With simple and great ingredients grown by farmers in the neighbouring villages, like our milk, cream, yoghurt, berries and fruits. We also adhere to craft. I want to know what each ingredient does for the taste, for the composition. I want to know how it works… And we go with simplicity. Our pastry is never about complicated flavour pairings – yet has simple, straightforward flavours. Chocolate pastries should be chocolate.
Over the years, we focused on a few classic bakes, a few traditional Czech pastries and ice cream. It really works for us… And, more importantly, for our customers, or should I say friends. Because that’s what we aim for. For people that are so happy and satisfied with what we do, that they keep coming back. Sure, our jobs take 365 days of our lives each year. But we wouldn’t want to do anything else.”
